Acceptance of fiber-enriched foods: The Freising Fiber Intervention Studies

A high fiber and whole-grain intake is regularly recommended to the population for the prevention of metabolic and cardiovascular as well as other diet-related diseases. The current median intake of fiber in the German population in the age group 51 to 65 years is 18 g in females and 20 in men (1/3 soluble and 2/3 insoluble fiber), markedly below the recommended intake level of > 30 g/day. In accordance with national guidelines, an increase in fiber intake in the general population is strongly promoted. Despite this clear message and a broadening portfolio of fiber-enriched foods in supermarkets, consumer acceptance of such foods is surprisingly low for unknown reasons and the sensoric perception of fiber-enriched foods by consumers remains elusive.

Prospective cohort studies suggest a protective role of a high whole-grain/fiber intake on the development of metabolic, cardiovascular and malignant diseases. This project aims to investigate the acceptance and consumption of fiber-enriched foods in a middle-aged population with or without metabolic syndrome (n=120). Initially, a variety of fiber-enriched foods is evaluated using a defined battery of questionnaires on sensory qualities and consumer acceptance. Then, fiber-enriched products are provided for 12 weeks under real-life conditions and dietary habits and consumption of fiber-enriched foods are documented. In addition, established cardiovascular risk factors are measured. In a proof-of-concept pilot study, the effect of a defined fiber product on the metabolome and microbiome will be examined under strictly controlled conditions. This study will serve as a reference for subsequent studies to examine the acceptance and efficacy of newly developed tastier fiber-enriched products (e.g. from WP2-3) and may offer new business opportunities for successful development and promotion of healthy and tasty fiber-rich convenience foods.


Primary aim of this project is to investigate consumer acceptance of various fiber-enriched foods already available on the market. Primary endpoint is the increase in fiber intake. Other objectives include

  1. Sensoric evaluation of fiber-enriched foods
  2. Preference and consumption of fiber-enriched foods under free-living conditions
  3. Effects of current fiber-enriched products on the cardiovascular risk profile under free-living conditions

In an additional proof-of-concept study in the second half of the first funding period, the effect of a defined fiber product on modification of the microbiome and metabolome will be studied using the unique research platform of the enable Cluster under strictly controlled conditions.
